CHARDONNAY

Grape variety:
100% Chardonnay
History: native
French vine, wide spread in the Champagne region, for a long time
erroneously identified in Friuli as being Pinot Bianco, at least
until 1978 when it was placed on the national register. Both sparkling
and non-sparkling wines are produced from this variety.
Tasting notes:
yellow colour with golden reflections. Fine, elegant, noble. Bouquet
with notes of apple, crusts of fresh bread. Copiously inviting taste
of apple and acacia flowers.
Vinification:
the grapes, gathered at a temperature of 22°C, upon arrival
in the winery were immediately separated, by rotation and compression,
from the cluster, then soft pressed. Must chilled at 15°. Settling
overnight. Pouring of must cleaned with selected yeast. Fermentation
at 18° C for 12 days. Decanting. Ageing in stainless steel vats.

12/14°C.
